Easy and delicious!
- 2 large tomatoes, cut in ½" slices
- ½ c. fresh basil leaves, washed
- mozzarella cheese
- salt and pepper to taste
- Lay the sliced tomatoes on a baking sheet.
- Start the broiler.
- Season the tomato slices with salt and pepper to taste. Lay one or two basil leaves on each slice. Cover with slices of mozzarella cheese or shredded cheese if that is what you have on hand.
- Broil for 5 minutes or so, until the cheese is melted and slightly brown
