Rutabaga Sunset

Rutabaga Sunset

  • 1 large rutabaga, about ¾ pound, peeled and shredded
  • 1 medium yam or sweet potato, peeled and shredded
  • 1 medium onion, sliced vertically into half-moons
  • 1 large kale leaf, stem discarded, chopped into bite size pieces, or use 2 small bulbs baby bok choy, chopped
  • ½ cup water
  • ½ cup raisins
  • pinch cayenne pepper
  • salt and pepper to taste
  • garnish with
  • 2 tablespoons chopped green onion
  • 1 sprig fresh herbs of your choice!
  1. combine rutabaga, yam, onion, and kale in a large deep skillet. Add water and cook stir over high heat for 4 to 7 minutes, or until the vegetables are tender. Add more water if needed
  2. add the raisins and cayenne, season with salt and pepper. Transfer to a serving bowl and garnish with green onions and herbs
