Chocolate Sweet Potato Brownies with Caramel Sauce

  • 1 large sweet potato
  • 4 eggs
  • ⅔ cup maple syrup
  • ½ cup coconut oil, melted
  • 2 tsp vanilla extract or vanilla bean paste
  • 4 tbsp coconut flour ( or all-purpose)
  • ⅓ cup raw cacao powder
  • 1 tbsp baking powder
  • pinch sea salt
  • Caramel Sauce:
  • ½ cup organic maple syrup
  • 1 cup coconut milk
  • 2 tsp pure vanilla extract
  • ½ tsp salt
  1. Brownies:
  2. Poke a few holes in sweet potato and bake until soft in oven at 400 degrees, about 30-60 minutes. Remove and let cool for 10 minutes. Turn oven down to 350
  3. Peel and mash potato in mixing bowl
  4. Add eggs, coconute oil, maple syrup and vanilla extract to the bowl. Mix well
  5. Next add the coconut flour, cacao powder, baking powder and salt. Mix all ingredients thoroughly.
  6. Pour into lined square baking pan and bake for 30-40 minutes. To see if it is down, insert a toothpick or wooden skewer into the middle and see if it comes out clean. If not, then cook for five more minutes and test again.
  7. Remove and let cook for 10 minutes in pan before placing on a rack to continue cooling
  8. Serve with caramel sauce
  9. Directions for Caramel Sauce:
  10. Heat small saucepan on medium heat and add the maple syrup. Bring to a boil and let it cook for 1 minute until slightly darkened
  11. Add the coconut milk, vanilla and salt, stir to combine
  12. Cook for 5-10 minutes until the caramel sauce thickens and gets darker
  13. Let it cool for 5 minutes before serving with the chocolate brownies
