Sauteed Fennel with Walnuts

  • 2 fennel bulbs
  • 2 tablespoons olive oil (or another cooking oil)
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • ½ cup chopped walnuts
  • salt and pepper to taste
  1. Chop fennel bulbs, removing core if you'd like by cutting a conical shape into the bulb. Mince garlic
  2. Heat oil in a cooking skillet at medium heat
  3. Add fennel and garlic to skillet and sautee for about 10-15 minutes until slightly browned
  4. Add ¼ cup water and cover skillet with a lid to steam the fennel, about 10 minutes
  5. Remove lid, add balsamic vinegar, nuts, and salt and pepper to taste. Reduce heat and let caramelize for a few minutes, stirring occasionally.
