Ingredients
- 6 ripe tomatoes dipped in boiling water for a minute, peeled, and chopped
- 2 Tbsp olive oil
- balsamic vinegar just a splash
- 1 Tbsp thyme freshly chopped
- 1/2 Tbsp tarragon freshly chopped
- 2 cloves garlic crushed
- 1 Tbsp homemade pesto
- salt & pepper to taste

Instructions
- Mix all ingredients and let sit for at least 15 min for the flavors to blend.

Serve room temperature over pasta, veggies, chicken, or toasted bread, like a bruschetta.
