Pumpkin and Rosemary Soup
- 2 tbsp unsalted butter
- 2 sprigs fresh rosemary
- 2 cloves garlic
- 1 onion – peeled and chopped
- 1 pie pumpkin – peeled and cut into small cubes
- vegetable, chicken, or beef broth
- salt and pepper to taste
Add rosemary on melted butter and stir. Add chopped onion and chopped pumpkin. Stir and fry for a couple of minutes. Add garlic and keep stirring.
Mixture will become dry and you will need to add some water.
Use hot water and add it gradually, by using small cups and only when previous water has evaporated. Cook for 15 minutes and then add beef broth. Cook for 8 – 10 minutes more.
Season with salt, pepper and nutmeg. Blend all the ingredients together and serve with few spoons of cooking cream.
