Rutabaga Sunset

Ingredients
- 1 large rutabaga, about 3/4 pound, peeled and shredded
- 1 medium yam or sweet potato, peeled and shredded
- 1 medium onion, sliced vertically into half-moons
- 1 large kale leaf, stem discarded, chopped into bite size pieces, or use 2 small bulbs baby bok choy, chopped
- 1/2 cup water
- 1/2 cup raisins
- pinch cayenne pepper
- salt and pepper to taste
- garnish with
- 2 tablespoons chopped green onion
- 1 sprig fresh herbs of your choice!
Instructions
- combine rutabaga, yam, onion, and kale in a large deep skillet. Add water and cook stir over high heat for 4 to 7 minutes, or until the vegetables are tender. Add more water if needed
- add the raisins and cayenne, season with salt and pepper. Transfer to a serving bowl and garnish with green onions and herbs
