Sauteed Fennel with Walnuts

Ingredients
- 2 fennel bulbs
- 2 tablespoons olive oil (or another cooking oil)
- 3 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1/2 cup chopped walnuts
- salt and pepper to taste
Instructions
- Chop fennel bulbs, removing core if you’d like by cutting a conical shape into the bulb. Mince garlic
- Heat oil in a cooking skillet at medium heat
- Add fennel and garlic to skillet and sautee for about 10-15 minutes until slightly browned
- Add 1/4 cup water and cover skillet with a lid to steam the fennel, about 10 minutes
- Remove lid, add balsamic vinegar, nuts, and salt and pepper to taste. Reduce heat and let caramelize for a few minutes, stirring occasionally.
