Zucchini Chocolate Cake
Another fantastic use for zucchini! If you like cinnamon as much as I (Sophia) do, you can up the cinnamon and clove spice a bit.
Ingredients
- 1/2 c. margarine
- 1/2 c. oil (or applesauce)
- 1 3/4 c. sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 c. sour milk
- 2 1/2 c. flour
- 4 Tbsp. cocoa
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. cloves
- 1/2 tsp. cinnamon
- 2 c. finely diced (or grated zucchini)
- 1/4 c. chocolate chips
Instructions
- Beat first 6 ingredients well.
- Mix dry ingredients together and add. Beat well.
- Stir in zucchini.
- Pour in greased and floured 9×13 pan. Sprinkle chocolate chips on top.
- Bake at 325 for 45 minutes.
