2015 – Week 11 Newsletter

Week 11 crop list

  • Sweet corn – all
  • Green beans – all
  • Cucumbers – all
  • Squash/Zucchini – all
  • Tomatoes – all
  • Hot peppers – all
  • Radishes – all
  • Potatoes – all
  • Kale – half
  • Eggplant/onions – single
  • Onions – full
  • Fennel – full

Farmer notes

  • 2nd crop of sweet corn had pollination problems and did not fill out the ears but what is there is very tasty. 3rd planting, like the 1st planting, there are no such issues – sorry about the ‘half ears’ this week.
  • Beets and melons should be good to go by week 12
  • We received 1.5 inches of rain last Friday, and now heat and humidity – a good recipe for plant growth
  • Cucumbers get more gnarly as the plant ages
  • Summer squash is near it’s end with winter squash right on it’s heels
  • Lots of folks on vacation this time of year – be safe and make sure someone picks up your share box in your absence
  • Peppers can be frozen to spice up a mid-winter meal
  • Make some fresh salsa this week – dice peppers, tomatoes, sweet corn, onions, garlic, parsley or cilantro if you have it, salt and pepper and lime juice – Italian dressing, balsamic in the mix if you want. You can eat this on or in almost anything!
  • Please wash your produce before eating it

 


Some recipes:

Every Tuesday night Julien the intern makes this Pad Thai dish for dinner:

Pad Thai

  • 1 cup water, plus more for soaking noodles
  • 1 10-oz. package rice noodles or ramen-style noodles
  • 2 Tbsp. olice oil
  • 2 cloves garlic
  • 1/2 12-oz. package tofu, drained and cut into small chunks
  • 4 Tbsp. soy sauce
  • 2 Tbsp. peanut butter
  • Juice of 2 limes
  • 3 Tbsp. sugar
  • Sriracha to taste
  • Produce from weekly CSA box of your choice: chopped green beans, diced squash, diced zuchini, diced onion, diced eggplant, chopped kale, diced peppers, etc.

Boil water and cook rice noodles for approx. 15 miutes. In large frying pan, heat the olice oil over medum heat and add garlic cloves and tofu chunks. Drizzle 1 Tbsp of the soy say over the tofu and saute untill golden brown. Saute all diced and chopped farm vegetables in olive oil and soy sauce, cook until desired firmness. Wisk together the peanut butter, lime juice, sugar, sriracha, soy sauce and 1 cup water. Add noodles and peanut mixture to the tofu and sauted vegetables, let sit for 5 minutes.

Shaved Fennel Salad

  • 1 shaved fennel bulb
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp fresh lemon juice
  • 1/8 teaspoon of chopped fresh thyme leaves
  • 1 Tbsp chopped fresh flat-leafed parsley
  • 2 Tbsp shaved Parmesan cheese

Toss all ingredients gently, and salad is complete.

Pico de Gallo salsa recipe

  • 1 medium tomato, diced
  • 1 onion, finely chopped
  • ½ fresh jalapeno pepper, seeded and chopped
  • 2 sprigs fresh cilantro, finely chopped
  • 1 green onion, finely chopped
  • ½ teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon

Add all diced and chopped vegetables together in bowl. Season with garlic powder, salt and pepper. Refrigerate for 30 minutes and enjoy it with tortilla chips!
