*Don’t forget to sign up for our 2022 offerings on our website here:  https://earthdancefarm.net/csa-registration/. We would love to have you join us!!
*I hope that everyone is able to pick up their boxes before any cold damage occurs – the potatoes or squash are probably the most susceptible
*We do a ton of roasting of roots during the winter – just add plenty of oil, salt, pepper and the thyme
*Soak the kale in ice water if it seems a little limp (this is also super tasty when roasted)
*You can also use the soaking method for any of the root vegetables and cabbages as well to firm/freshen them up if they become dry or limp. We put them in bowl of cold water over night and by morning they’re back to new!
*Turnips are great on a cold cabbage salad or slaw, in soups or roasted, in a potato turnip mash, or try making a potato turnip au gratin (super tasty)! You will be receiving turnips in every box going forward, so we dare you to get creative!
*I am not completely happy with this variety of Acorn squash – definitely some butter and a bit of brown sugar/honey/maple syrup makes it more delicious
*Coleslaw, kimchi, or sauerkraut may be in order
*Beets and carrots are wonderful sliced up, tossed with olive oil + s + p + garlic + thyme, roasted to a caramelized perfection, and topped with a dollop of goat cheese
*Please return our boxes each week for us to reuse
