- 1/2 cup olive oil
- 1/2 cup lemon juice
- 1/4 cup apple mint packed
- 3 tbsp honey or maple syrup
- 1 tbsp Dijon mustard
- 2 cloves garlic roughly chopped
- 1/4 tsp salt
- black pepper to taste

- In a food processor, combine all of the ingredients and blend until smooth.
- Taste, and add more salt and/or pepper if necessary.

This dressing will keep in the refrigerator, for up to 1 week.
