- 1 lb potatoes chopped
- 1 fennel bulb sliced
- 1 yellow onion sliced
- 6 garlic cloes sliced
- 8 sage leaves
- 3 Tbsp olive oil
- salt & pepper to taste

Instructions
- Toss all of the ingredients and lay on a baking sheet. Roast at 425 degrees F until golden crisp, 35 to 40 minutes, tossing halfway through. Season with salt and drizzle with olive oil.
