Ingredients
- 6 cups napa cabbage shredded
- 2.5 tsp sugar
- 1 tsp toasted sesame oil
- 1/3 cup fresh mint leaves torn if large
- 2 medium carrots cut into matchsticks
- 1/3 cup rice vinegar
- 1.5 tbsp soy sauce or to taste

Instructions
- In a large bowl, toss together cabbage and carrots.
- Combine sugar, vinegar, sesame oil, and soy sauce in a small bowl. Stir until sugar dissolves, then pour over cabbage and carrots.
- Toss until slaw is coated and top with mint leaves.
