Ingredients
- 2 cups granulated sugar
- 2 cups peeled and grated raw zucchini
- 3 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp kosher salt
- 3 tsp ground cinnamon
- 1 cup walnuts coarsely chopped

Instructions
- Preheat oven to 350 degrees F.
- Beat the eggs until light and foamy. Add the sugar, oil, zucchini, and vanilla and mix lightly but well.
- Combine the flour, salt, soda, baking powder, and cinnamon and add to the zucchini mixture.
- Stir until blended, add nuts, and pour into two 9x5 greased loaf pans.
- Bake in the oven for 1 hour.
